Cookies for breakfast? Indeed! There’s nothing easier or more exciting for little ones than a nutritious (and equally tasty) cookie for breakfast in the morning. This quick stir-together-and-bake cookie gives you everything you want in a breakfast without the extra sugar and junk you don’t.

INGREDIENTS

  • 1 ripe banana
  • 1/2 cup peanut butter
  • 1 1/2 cups gluten-free rolled oats
  • 2 tablespoons maple syrup
  • 2 tablespoons flaxmeal
  • 2 tablespoons hemp hearts
  • 2 tablespoons cacao nibs
  • 1/8 teaspoon salt

INSTRUCTIONS

  1. Preheat oven to 325°.
  2. Combine all ingredients in a medium bowl. Scoop mixture out with a 1/4-cup measure onto parchment lined baking sheet. Shape into a circle, if needed.
  3. Bake at 325° for 14-15 minutes or until golden.
