Ingredients
- 4 cups water
- ¼ tsp. sea salt (Himalayan salt)
- 1 cup steel-cut oats
- 2 tsp. finely chopped orange peel
- 2 Tbsp. unsweetened dried cranberries
- 1 tsp. raw honey (optional)
- ½ tsp. ground cinnamon
- 2 Tbsp. 100% orange juice (optional)
Instructions
Bring water and salt to a boil in medium saucepan over medium-high heat. Reduce heat to low.
Add oats; cook, stirring frequently, for 15 to 20 minutes, or until water is just absorbed. Remove from heat.
Add orange peel. Let stand for 1 minute.
Add cranberries, honey (if desired), and cinnamon; mix well. If too thick, add orange juice.

- 1 tsp. pure vanilla extract
- 2 large eggs
- ¼ cup unsweetened applesauce
- 2 Tbsp. raw honey*
Instructions
Preheat oven to 400° F.
Lightly coat a 2-quart baking dish with spray. Set aside.
Combine oats, baking powder, nutmeg, and salt in a medium bowl; mix well. Set aside.
Combine almond milk, extract, eggs, applesauce, and honey in a large bowl; whisk to blend.
Add oat mixture to milk mixture; mix well.
Pour mixture into prepared baking dish.
Bake for 35 to 40 minutes, or until top has browned.
