11. Peach Pie Smoothie Bowl

Living up to its name, this smoothie bowl from Recipe Runner allows you to enjoy the flavors of peach pie sans guilt!

This bowl is super creamy, with a base of almond butter, peaches, non-fat Greek yogurt, and your choice of milk, and is topped with granola, toasted almond, and of course, peaches!

A thick, creamy, protein filled peach smoothie topped with granola, almonds, and fresh peach slices for a fun and filling breakfast!

INGREDIENTS

  • 1 1/2 cups frozen peaches
  • 1/2 cup milk of choice
  • 3/4 cup plain non-fat Greek yogurt
  • 1 scoop unflavored or vanilla protein powder, (optional)
  • 1 tablespoon almond butter
  • 1 tablespoon honey, use more if you like it sweeter
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • pinch of nutmeg
  • Fresh peach slices, granola, and toasted sliced almond for toppings

INSTRUCTIONS

  1. In a blender add all of the ingredients except the toppings and blend until smooth.
  2. Pour the smoothie into a bowl and top with fresh peach slices, granola, and toasted almond slices.

NOTES

Storing: This smoothie bowl is best served immediately as the ingredients can start to separate over time.

Freezing: You can freeze the smoothie mixture prior to adding toppings for up to two months using ice cube trays. When ready to enjoy, add the cubes to a blender with milk and blend until smooth and creamy.

Ingredients

Base

  • 1 frozen banana
  • 1/4 cup Greek yogurt, frozen
  • 1 large handful of spinach
  • 1 slice of pineapple, about an inch thick
  • 1/2 a Granny Smith apple, chopped with skin
  • A squeeze of lemon
  • 1/8 cup coconut water (only if needed)
  • Optional: maca, spirulina or other green superfood powders that you like.

Optional Toppings

  • Blueberries
  • Toasted pecans
  • Acai berries
  • Chia Seeds
  • Coconut shavings

Directions

  1. In a blender, combine the base ingredients and drizzle in coconut water as needed. You don’t want to add too much coconut water though because a smoothie bowl needs to be really thick!
  2. Pour into a bowl and garnish with the toppings of your choosing.
